Yes, I have still been eating my dinner ....

Oh dear. I have had a little sabbatical from posting here. I just thought my dinners were getting rather boring and not interesting to anyone and perhaps it was time to stop this navel gazing...

But then I cheered up!  And if you look over at A Greedy Piglet, you will see that I have been baking lovely brioche type things, and this has made me feel much more in the mood to tell you about my daily boring old dinners again.

So I have made you a little gallery of recent dinners. Lots of roasts and some other bits. Let me know if you would like more info on anything. And don't forget, if you would like a detailed recipe over on A Greedy Piglet, do let me know and I'll do my best to accommodate you :)

Expresso Arancini with Ham, Emmental and Peas - Saturday November 10th 2012

I showed you all the lovely Riso Gallo goodies I won on Facebook didn't I? Over on the Greedy Piglet - The Bare Minimum. 




I wanted to try out the Express type risotti to see if they can be used to make things, other than just heating quickly for lunch. So I picked out 2, the four cheese ready cooked one in the Risotto Box , and the Mushroom Express Rice that has to be cooked but only takes a moment in the microwave. And I made arancini or fried risotto balls.  Traditionally, in Siciliy, these are filled with a lovely rich ragu sauce. But they are also made with mozzarella cheese (when they are called suppli al telefono in some regions, because the cheese stretches like telephone wires when it is cut open)  I simply made a filling with what was in the fridge.



The Risotto Box looked most unpromising when I opened it up, all dry and separate, but as I turned it out into a bowl, I found lots of sticky cheese sauce in the bottom. Mixed up together meant it stuck together nicely to make arancini.

The Express Rice I was hoping to do the same with, but it really is too dry to use straight from the packet, and looking on the packet I found that it needed water added before a zap in the microwave. So it took longer to prepare than the Risotto box as it had to be allowed to cool down before I could shape it.  I mixed an egg, and some of the ham and cheese filling into the rice, spread it out on a plate and left it to cool.

The mixture for the filling was a couple of slices of cooked ham, a couple of ounces of Emmental cheese (I wanted one that made strings, you can use mozzarella, but I didn't have any) and a handful of thawed peas, mixed into some soft cheese.

I made two types of rice balls. Both were egged and breadcrumbed (Panko breadcrumbs - I have found that Sainsbury's do their own brand now! Who knew? ) and then chilled a bit until I was ready to fry them (they had to be prepared pre-Strictly Come Dancing, and then cooked afterwards.. can't disturb my adoration of the pro-dancers with cooking..) .

One has the mixture as a filling in the middle of the rice (I made that with the 4 cheese Risotto Box) - you take a spoonful of rice with wet hands, flatten it out, put some of the filling on, then top with another spoon of rice and form it into a ball.   As you can see, it makes for a lovely oozy bit in the middle of the rice. It also makes the balls a little more fragile to fry.



The other one has the mixture folded through the rice (see above, made with the mushroom rice). so you just take large dollops and make balls without adding any extra filling.  As it has a little egg in with the mixture, it holds its shape well, and fries up nice and plump. But it is drier than the other version, and I think I prefer having the mixture in the middle.

I don't have a deep fat fryer, if you do you can fry them in there until golden. I fried mine one by one in hot oil in my wok, them transferred to a baking sheet and finished off in a hot oven until golden and crispy. I liked doing them that way as it gave me time to make the sauce and the salad. 


They do need a bit of something saucy to stop them from being too dry, so I topped them with a tomato and onion sauce (just finely chopped onion, sauté, then add a carton of chopped tomatoes, a little salt, sugar and oregano, and simmer until thick.)

Faggots wrapped in bacon - Thursday November 8th 2012

I am rather partial to a nice faggot. My favourites at the moment I get from The Giggly Pig at Walthamstow Farmer's Market.

They are a little on the large side for me, and they are not wrapped in caul so can sometimes fall apart a bit. I used 4 and reformed them into 6, (I think the smaller ones cook better, and so have a nicer texture) and wrapped them in streaky bacon before baking in the oven for half an hour. I added some gravy for the last 10 minutes. Mashed potatoes and greens of course.

Smoked Cod with Thai Style Rice - Wednesday 7th November 2012

Oh dear.

I was supposed to be making kedgeree. But when Old Mother Hubbard opened the cupboard there was no basmati rice ... three different risotto rices, and sushi rice, but these are all sticky rices and I wanted light and fluffy. What to do? I certainly wasn't going to run to the supermarket for more rice at this late stage.

Then I remembered I had a couple of packs or Ainsley Harriot Thai rice (bought for quick lunches), that would do.  After all, kedgeree was curried, so Thai curry should go as well, shouldn't it?

I gussied the rice up with extra Red Curry paste and fish sauce, the addition of vegetables as it finished cooking, so they steamed nicely (red peppers, green beans, peas and broccoli) and then some coriander to finish. I tasted the rice, it was savoury and tasty.

The smoked cod would normally have been flaked into the mix, but I decided to serve it simply on top, in one piece. I am glad I did.

The cod was delicious. The rice was delicious. But together.. oh no no no... I would not suggest anyone combining these two. We carefully removed the fish from the rice and ate them as separate courses.

Using up - Cold Roast Lamb and Bubble & Squeak - Tuesday November 6th 2012

After any roast dinner there is always the deliciousness of Using Up Day... cold roast meat and the excess vegetables to be made into Bubble and Squeak.

Bubble and Squeak is a true British tradition, and recipes can be found dating back to the 18th century. It is called Bubble and Squeak as originally it would have been made from leftover meat and gravy along with cabbage, and the gravy would bubble and the cabbage would squeak as it cooked.  Now it is more usual to include potatoes, and to fry up the vegetables, and serve the meat and gravy separately.

If there aren't sufficient potatoes in the leftover vegetables, I like to cook and mash a couple more, as you really need that starchy softness to hold things together.  Then just chop up all the other roots and vegetables that you have, and mix them all together with some extra seasoning if you think it needs some. You can add an egg if you wish, although I didn't. Then fry in olive oil, or leftover fat from the roast if you have any, turning and mixing from time to time to get all the golden crispy base mixed through the vegetables.

So frugal and simple yet so very delicious. You could serve the bubble and squeak for breakfast too if you like, with a fried egg on top.

Felicity Cloake's Sticky Toffee Pudding - Monday November 5th 2012

Well we actually had slow roast leg of lamb, boned stuffed and roasted for hours. But I forgot to take photos it was so delicious and I just wanted to thrust it down my gaping throat.

mmmmmmmm.....

and as it was a birthday celebration for Rebekah, we had cake and pudding too - pudding being a Sticky Toffee Pudding.


I have not made this before, so took myself off to check out Felicity Cloake's Guardian column for the best recipe (she tries things out so we don't have to...)  . I made her version, sort of. No spice although I did add a little cinnamon to the cake mixture. No nuts. And I did go with Jamie Oliver's sauce recipe. But not in the bottom as well as the top. So it was a sorta Felicity pudding.

But I wanted to eat dinner in peace, and then come out to a bubbling pudding, so I had made the pudding in advance and then put the dish into the oven to heat through instead of grilling it. Look  - it was very hopeful. All covered in its caramel sauce.




However, this was NOT a good idea. The heat was too high, the sauce split and I was left with pale curd sitting in a large puddle of butter. Oh dear. Letting it cool and sort of stirring round on the top of the pudding helped to mix it back again, but next time I will certainly be careful of the temperature I use, or I will reheat the pudding on its own, then add the caramel sauce afterwards.

Loved the pudding itself though. It tasted as it should, nicely date-y and dark and very light. I had a little too much mixture for my dish so cooked some in a small dish to make a light cake without caramel sauce. I haven't cut into that so I will be interested to see if it does eat well as a plain cake.

Grilled Lemon Sole - Sunday November 4th 2012

Lovely simple grilled lemon sole. So delicious. So easy.  With roast potato wedges and fine green beans. And a dollop of tartare sauce on the side.

I have been so lazy this week!  I don't think much has taken more than 20 minutes or so to cook.  The longest things to cook here were the potato wedges, and they were only a half an hour.

Think of dinner. Blink. Eat it. Sounds ok to me...

Sausages with Creamy Wholegrain Mustard sauce - Saturday November 3rd 2012

It is definitely getting wintery, damp, cold, and generally grey.

Only a good, porky sausage can cheer me up when it is this grey. I made a creamy mustard sauce, gussied up with a good tablespoon of wholegrain mustard, instead of ordinary gravy. Just a little flour in with the fat from frying the sausages, some water from boiling the cabbage, seasoning, and little sage, a good teaspoon of English mustard and a tablespoon of grainy mustard, and you have a very tasty sauce.


Creamy vegetable soup with croutons, sausages and bacon - Friday November 2nd 2012

With half of the bag of stir fry vegetables from Thursday to use up in the fridge, but no desire for another ersatz Chinese meal, I decided to make soup.

Two onions, a leek and half a head of celery, roughly chopped and softened in some oil in the bottom of the pressure cooker, then the stir fry veg thrown in on top. Some fresh thyme leaves, vegetable stock powder, water to cover.  Cook for 15 minutes at full pressure, release the pressure then allow to cool slightly.  Whizz up in a liquidiser or with a stick blender, and adjust the seasoning to taste.

Whilst this was cooking, I tossed some bread cubes in garlic olive oil and baked them for 15 minutes at high heat until golden and crisp, and fried a couple of sausages and some chopped bacon.




25 minutes including preparation, and a couple of bowlfuls each made a useful and very cheap meal.

Teriyaki Pork with Stir Fry Vegetables and noodles - Thursday November 1st 2012



Bob came home from Sainsbury's clutching a bag of stir fry vegetables and a pack of fresh noodles. £1 for the lot..

So with the addition of a bit of oyster sauce, a couple of trusty pork steaks from the freezer and a good slug of teriyaki sauce for them, this was another quick quick quick meal.  Just thrown at the sizzlingly hot wok for a minute or two, and topped with the glazed pork that I cooked separately. Only thing missing was some coriander....

DISCLAIMER: this isn't proper Chinese or Japanese or Thai or anywhere oriental.  In fact, the only thing Eastern about it is the postcode...

Pork Loin Steak with Puy Lentil Salad and sauté potatoes - Tuesday October 30th 2012



Its been all about speed this week,  this delicious meal was made and on the table in about 20 minutes.

The potatoes were left over boiled ones, sliced and sautéed whilst the pork was on the griddle.  And whilst those cooked a can of puy lentils, combined with shredded carrot and kohl rabi, red onion and parsley. In a honey and whole grain mustard dressing.

Took no more time than it took to eat it :)

Scallops and Prawns with a fresh tomato sauce - Saturday October 27th 2012

Another quick easy delicious fish dinner.. little scallops fried in a butter, with warm water jumbo prawns, and a fresh tomato sauce..just skinned tomatoes chopped and fried with an onion in a little garlic oil, a splash of water and a splash of balsamic vinegar at the end. 15 mins cook time, so no longer than it took to cook the spaghetti.



Oven baked Hake with Herb Caper Butter - Friday October 26th 2012

Friday Fish... deliciously simple oven baked hake, with a dill parsley and caper butter sauce. 30 mins top to bottom including prep time makes me happy.

Beef and Chestnut Stew with Horseradish Dumplings - Thursday October 25th 2012

I think this is perhaps the winteriest stew you could imagine!

I cleaned out the freezer, so this was all the bits of beef and ox kidney that had been in there long enough, with plenty of root vegetables, some good beef stock (made with Essential Cuisine beef stock powder, I am getting VERY fond of these stocks) and plenty of thyme. Pressure cooked again, just 20 minutes was enough to make lovely tender beef. Chestnuts added to warm through and then dumplings.. mmmmmm...these are the fluffiest lightest dumplings you can imagine... mmmmmmmm

Prawn and Dill Risotto - Tuesday October 23rd 2012

It is quite autumnal outside, so I felt contrarily in the mood for something light and fresh to remind me of the summer we didn't have.

Prawns, peas and broad beans in the freezer, onions and leeks in the fridge, Riso Gallo Vialone Nano rice (the best for fish risotti I think) and Essential Cuisine Fish stock in the cupboard, Marsala in the drinks cupboard, and my fab Odalisque Risotto recipe on  A Greedy Piglet to use as a base.  With the addition of lots and lots of dill at the end.

Offally Good Calf Heart Braise with Roots and Mash

A very old frugal favourite from my childhood, a calf's heart braised with carrots, turnips, swedes. You can read how I made it over on A Greedy Piglet.

Some more of the Gammon broth with different vegetables and chick peas today - purple curly Kale and sweet potato as well as the standard carrot and celery. Delicious!

Followed by a grilled rump steak and some saute potatoes. More delicious!

Pump Street Bakery's Butternut Squash & Apple Soup - Tuesday October 16th 2012

Whilst up in Suffolk for Aldeburgh Food Festival, we popped into the cafe at the Pump Street Bakery in Orford, possibly my favourite bakery these days. Such amazingly good food, and a really good vibe. This is good food made by people who adore good food.

I speak to Joanna on Twitter, so asked her how to make the butternut and apple soup that I had for my lunch there:



Here is the recipe that she tweeted for me:

soften onions and leeks in olive oil, add cubed squash, sauté, add veg stock and diced apple
simmer til squash cooked, then add some apple juice, blitz and season well!

So I worked out my own proportions, and came up with this:




Delicious! and not bad looking if I do say so myself!

(It was a fast day for 5:2 diet today, so this was dinner with the addition of a ham and cheese omelet. )

Horse Mackerel with Kohlrabi & Golden Beetroot Salad - Monday October 15th 2012

Rather pleased with the Horse Mackerel. Dead cheap, bit fiddly to prepare, but really very tasty. You can read all about them over on A Greedy Piglet if you like..

And a new salad to add to my repertoire, which went very well with the slightly oily fish, julienned kohlrabi and golden beetroot, with Crush lemon dressing and some chopped dill. Very yummy!



Grilled Mackerel fillets and Salad - Sunday October 14th 2012

Very nice fish on the fish stall at Walthamstow Farmers Market today, so I treated myself to a nice fat mackerel, and a couple of horse mackerel (more of them tomorrow..).

I filleted it myself, and because I am lazy about pin boning, cut each fillet into two channeling out the pinbones as I went. So each of us had 2 nice slim fillets.

It is still eat up the fridge in this house, and I had salad to use up, and a bag of salad potatoes (baby Maris Pipers) from the farmers market last week, so these I boiled and then tossed in a beurre blanc made with my grapefruit vinegar instead of wine. (A little too sweet, next time I will use half and half with white wine) and flavoured with fresh dill.


Saturday Gammon Fry Up - Saturday October 13th 2012

Nice little bit of gammon, Sainsbury's Basics, salty but still tasty, and at 45p for the two pieces I am not going to whine about that. You eat excellent quality or you eat cheap. Today was about eating cheap.

Baked beans, oven fried chips (not frozen ones, King Edwards cut into chips, par boiled, and then sprayed with olive oil and baked for 45 mins on high heat) and a fried egg make a good transport caff style dinner!

Eating from the fridge - more Minestrone with Meaty things Friday October 12th 2012

Lots of minestrone still left from Thursday. And still plenty of food in the fridge. How come I have so much food in the fridge on a Friday??

So today we have soup followed by ham and pate, more of yesterday's cheese with cheesy soda scones and crackers and salad.

Oh, and my home made chilli jelly.

Eating from the Fridge - Minestrone and Cheese - Thursday October 11th 2012

I have been buying too much food again, and it is time for a few days of largely eating from the fridge.

Today we are having soup, a minestrone type broth with just about all the veg I have in the fridge, and some butter beans and chorizo and smoked paprika and soup pasta.





And I have lots of cheese. And plenty of crackers.





It's a Thursday Cheesey Fridge Feast!

Sausage Patties with Kale and Mash - Thursday October 4th 2012

There are times when I love a sausage. OK, you are quite right... ALWAYS I love a sausage. But sometimes I love a sausage with no skin. Does that make any sense?

I think some good quality sausages come in skins that can be a little tough. Nothing wrong with that in its own place (probably at breakfast time when my teeth are sharper) but I have a very fond place in my heart for sausage patties made with sausage meat.

I discovered these the first Christmas I cooked on my own, when with two of us even stuffing and sausage rolls didn't use up all the sausage meat I had bought.   So I patted it down into little flat burger shaped, dusted them in a little flour and fried in just a little oil until toasty and cooked through. I really love the way the outside goes slightly crusty and very flavoursome, and now buy sausagemeat for the purpose. These ones are more oblong as my sausagemeat today was in a nice oblong shape, but if I buy sausagemeat in a tubby tube, then I just cut pieces from the fat sausage about 2 ins thick, flatten them a little and off we go.

If you don't fancy your local sausagemeat, but have ace sausages in their skins, no problem just slit the skins and slip the sausages out. Flatten them out into roadkill sausages and treat them the same way.

I made these with creamy mashed potatoes, carrots and lovely sprightly fresh Kale from Aldeburgh.

Retro dinner! Homemade meatballs and fresh tomato sauce with pasta shells - Weds October 3rd 2012

Meatballs! Now there is something that takes me back a bit, one of the first things I used to cook when I was married and we had almost no money.

I made some last week when my grandson came for lunch, and had frozen the remainder. They cook easily from frozen, just thrown onto a baking tray, cooked until golden and then added to a fresh tomato sauce.

Onto some cooked pasta - large lumaconi snail shells - some parmesan and dinner is ready.

Pinney Smoked Sardines and Old Smokey Coleslaw - Tuesday October 2nd 2012

Part of my haul from Aldeburgh Food Festival, some smoked fish from Pinney's of Orford.  I bought some smoked sardines, as I had never had these before.

They are delicious but there are a couple of things to be learnt..

a) they look as though they are ungutted, but in fact they have been gutted through their gills, so only have their roes inside. Phew.

b) Unlike fresh or canned sardines, the skins are tough, and need to be removed before eating. The bones are tiny except for the main backbone, but you may as well fillet the fish for serving as they will be easier to eat and look nicer on the plate. As you can see, I didn't discover this until we were eating them as I had plated them whole, just with their heads taken off, assuming the skin would be tender and edible.

The coleslaw is shredded golden beetroot, carrot and red cabbage, with added poppy seeds, and dressed with my grapefruit vinegar and a splash of olive oil. Seasoning this time was some of Toezapper The Urban Spiceman's Old Smokey seasoning that complemented the fish beautifully.

Slowly Re-roasted Slow Roast Lamb - Monday 1st October 2012

It's October. It's definitely got a tingle in the air now. Autumn is firmly here.

Mashed potatoes it is then...

With the leftover part of the Slow Roast lamb from Friday roasted again until piping hot. Kale, potatoes and carrots from Aldeburgh over the weekend.  Not complicated. Just delicious.


Crab. Sunday September 30th 2012

Just plainly dressed Crab. A teeny bit of salad, mayonnaise and very fresh white crusty bread and butter.

Home from Aldeburgh Food Festival with this little chap in my bag, bought from Brinkley's Fish Shed on the quay at Orford, he had been swimming in the sea on Saturday morning.

Mediterranean Vegetable Frittata - Thursday September 27th 2012

It wasn't a Monday. So this isn't a Meatfree Monday ... It is a Frittata Fursday.

Got to like a nice flat omelette with lots of Mediterranean vegetables. I have popped instructions for making this onto A Greedy Piglet, as it is so adaptable to what is in the fridge.


With a bright crisp green salad, and some odd oven chips to use up from the freezer clear out the other day...

Spanish Style Hake Cutlet - Weds 26th September 2012

So sorry to have been absent without leave.. I have been eating, but the art of being here left me for a short while.

Never mind, service will be resumed now, and we will start with a lovely piece of fish. Hake is a flaky white fish, similar to whiting, finer grained than cod or haddock, that we hardly ever ate when I was a child. We used to export nearly all of our hake (and we have plenty particularly in Cornwall, where this piece came from) to Spain and Portugal who are most partial to it. Fortunately, we can find it in the fishmongers here now, not always and not easily, but it is there to be grabbed when you see it.  I like a cutlet (cut across the bone ) as it holds together really well.

In honour of the Spanish whose hake I have purloined, I chose to make a rough version of a Galician favourite, with potatoes, red peppers and smoked paprika. Very nice, and I doubt this is the only time I'll be making this.

5:2 Feast Day Roast Pork Belly Saturday September 1st 2012

Oh how can you hate dieting if your diet allows you to eat Roast Pork Belly with all its fat and crackling???  And real gravy made with the fatty juices?

I love pork belly.

This wasn't the best bit of pork I've ever had, just an ordinary supermarket pork belly, outdoor pork but not a good rare breed or anything.  Still, slow cooked for about 4 hours, with a fiery furnace blast at the front and back ends to crisp and crunch up the crackling it was lovely.

I roasted it on a bed of onions with fresh thyme and bay leaves.  Gave the pork a good rub on the underside with Toezapper's Urban Spiceman Tickety Boo spice (you could use any spice blend you fancy, TZ's blends aren't available commercially yet), and a nice slug of sherry vinegar for flavour.

That was the old dieting days, and the main reason I could never stick them for very long. That sense that tomorrow would NEVER come. That I would never have jam again. But now on the 5:2 diet, I DO have jam tomorrow.

The feast days of tomorrow are what make the fast days bearable to be honest... Just to be able to say "don't worry, you can have that tomorrow" and "yes, you can make more cakes tomorrow" is amazing.

So what is surprising is that I don't go mad on my feast days. The mere fact that I CAN should I so wish is enough for me. I don't count on my feast days, so I have no idea how much I am eating, but the scales are going down (albeit slowly) which is more than has happened for many a month now.

I didn't take pics everyday this week for some reason (not been feeling very excited by life this week, so perhaps it was that) but I have found a couple for you.

Home made quiche with cannellini beans salad and green salad


Simple quiche of chopped smokey bacon with cheddar and red onions in an egg and single cream custard.  You will see that the custard is rather thin. That is because I forgot that my new oven has a ridge along the front of the hob, so when I took the blindbaked quiche case out to put the filling in, I put it on the top as I always have done. Poured the filling in. Which promptly flowed out the other side all over the hob. Oops. And no more cream left so no more filling to be made. Oh what the heck. I threw it in the oven and it was fine.

Just rather thin.

The cannellini beans are an old favourite salad. Runner beans or (as here) fine green beans cooked through, tossed in a vinaigrette with lots of shallots in, and then a drained can of cannellini beans added when they have cooled down.


5:2 Fast days week ending 31st August 2012

Oh it has been difficult finding any oomph this last week for some reason.  I took the photos of my dinners but couldn't find the energy to write them up.

So yet again, it is a digest of faintly interesting bits. And there aren't that many of them either.

Tuesday 28th August - Fast Day
Home made Vegetable Soup with 0% yoghurt and herbs
Lemon Sole with Runner Beans and Cauliflower


Total 380 cals

Simple vegetable soup, carrots, celery, sweet potato, mushrooms, onions, cooked in vegetable stock and then blended into a thick puree. Swirled with a little 0% yoghurt and some chopped fresh herbs.



Plain and simple grilled lemon sole, sprayed with a little Fry Light, and served with plainly steamed cauliflower and runner beans.



Friday August 31st  - Fast Day
Vegetable Soup
Chili con carne, rice and salad

I missed out on breakfast today, attempting to keep the calories down even further, but I was hungry by dinner time so used up ALL my 500 cal allowance on a substantial evening meal of Chili con carne with rice and salad, with another portion of my veggie soup beforehand.

Chili has been a staple in this house since student days. Easy, cheap and tasty. It can be gussied up to make it more elaborate, but I have a very soft spot for the basic student version.

This was cooked a low fat way to keep the calories in check - Chili can be quite oily and calorific if you aren't careful - the onions and garlic were dry fried in water with a spray of Frylight, before adding in the extra lean mince and browning.  Cumin and Mild Chili spice added in and fried in with the meat, and then a carton of chopped tomatoes and a can of red kidney beans added and the whole simmered until nice and thick. A third of a cup of cooked basmati rice on the side, a good sprinkling of coriander and a goodly sized green salad. And a nice dollop of 0% Total yoghurt for extra yumminess.
