Today is the turn of the Purple asparagus from
Aspara Buddies. My new found favourite I only tried Purple for the first time this year, (kindly gifted to me by
Lahogue Farm, and eaten with
amazing blender hollandaise). Another lovely day, I am still in the mood for salad.
This is my take on a classic Salad Nicoise in so far as it has :
- Green beans
- Tomatoes
- Tuna
- Potatoes
- Eggs
And the raw purple asparagus finely sliced (with a knife, though I should have got the mandoline out, it would have been finer) and scattered over the top.
